Horse Valley - Coron, Palawan

I have not ridden a horse (except maybe when I was a toddler and my mom placed me on top of one to have a picture taken, that was in Baguio), so I was really excited to go to this place.  The horses were busy grazing somewhere when we got there and we had to wait for the caretakers to gather their two most tamed horses, Bullseye and Junjun.  I had Bullseye, he sure is friendly but he is a runner, walking around seemed to bore him so we began trotting ‘til we were running! Hahaha! That was scary but it was so much fun, that horse gave this newbie a ride to remember!  Thanks also to Ruel, the kid who was guiding me, he gave me a lot of tips and made sure not to leave me alone by running along with us. For the life of me though, I cannot remember the name of the guy who is in charge of the place. Will let you know once I find his contact details somewhere, in case any of the readers here want to visit the place. It is just a tricycle's ride from the town of Coron, you won't get lost. The fee is Php100 for an hour, really worth it!

Herb-y Fish Fillet

Just want to share one of my easy and quick to make fish dish. I call this "herb-y fish".... hehehe.... simply because it is smothered with herbs!

Usually I use "tilapia" fillet but you can opt to use your fish of choice. First, I rub some salt and lemon juice (or calamansi) on your fish. Then, the smothering begins! I love parsley, some italian seasoning, and lots of pepper. Want it real spicy? Use cayenne pepper. When you're done with this, top it all with parmesan cheese. Bake until brown. Yummy!!!

I eat this as is, but I guess this is best dipped in sour cream and garlic sauce.

Promo Airfares - Tips to Avail One!!!

Obviously, traveling is one of my passions, but I am not some rich girl who can afford the standard fare rates offered by the major airlines. So, to satisfy my passion and yet not burn a hole in my pocket, I am always in the look out for promo airfares. I know a lot of people are skeptical about this as I have seen a lot ranting against the airlines regarding the "false" advertisement. For a fact, these promos are true as I have acquired these for several times already. Just this year, I have tickets to Cagayan de Oro this month, to Cebu on July, and to Boracay come September. The fares ranges from Php350 to Php450 for a round-trip flight. Not bad, eh? The key is to always be on the look-out and be quick in booking your flights 'coz these seats sell like hotcakes! Or shall we say, hot pandesal! Sometimes, the flights get sold out right in front of my eyes as I was about to hit "book this flight", literally. If you are slow and indecisive, chances are, you ain't gonna get lucky and that is your fault so don't go ranting against the airlines. Rant only for valid reasons, gets?

Anyway, since all my booked flights are from Cebu Pacific, I will share here my experiences and techniques in booking their flights. All major airlines have promos but I have noticed that CEB offers the most promos in a year. About PAL (Philippine Airlines), they do have their payday special and some midnight promos, but I haven't tried them yet, maybe when I plan my travels next year. I think I already have enough for 2011.

Take note though, most promos are offered for those who book their flights online, so it is a big advantage to have your own reliable internet connection at home.

Okay, for the tips:
  1. Bookmark their website on your browser. - Just imagine wasting minutes searching for their website. By the time you get there, some flights would already be sold out!
  2. Subscribe to their email service.- This way you get informed of the latest promos first-hand.
  3. If you are using Facebook, add their page.- They usually post their promos a day  before the promo date. And usually, those flights get available for booking the night before the actual promo period. So, check once in while.
  4. If possible, already have a list of "priority" dates when you plan to do your travel. Or at least, have a calendar handy and visible.
  5. Once the promo starts, open their website in multiple tabs and multiple browsers. Why? So you can check the availability of flights in various dates simultaneously. This for me is very important! Doing things one at a time is a total waste of time especially if you have a slow internet connection.
  6. The moment you find those vacant seats, decide immediately if you are going to book or not. It pays if you and your travel companions agreed on the destination and dates together early on so you won't have to call them one by one to confirm and argue at the last minute. It is also for this same reason that being in the airline's email service is much of an advantage, you get informed early on and can plan.
  7. If you really are on a budget, choose the Go-lite fares. They are much cheaper and you will be obliged to travel light, which is a good thing really.
  8. Book fast while making sure you fill up the necessary fields with the right details. For this, I have also saved all my travel companions' necessary info for easy access (birthdays, address, contact details, etc.).
  9. Check all the details before final confirmation of your booking. These details may include: the total fare (make sure you are charged with the right amount); some funds that the airline may suggest you donate in which you have the option not to if you are really on a budget; seat reservations which require an added fee but not really necessary; additional insurance; etc.,
  10. Confirm your booking and pay your charges. Online transactions used to require payment by credit card but they have added other options now, such as, through LBC, Bayad Centers, and banks. However, you have to make your payment before midnight or your bookings will be cancelled.
That's about it! Your e-ticket will be emailed to you. You can now relax or start planning your itineraries. For this, I usually join forums to get actual experiences from those who have traveled to the specific place. Do not rely on the hotel's website, ask those who have actually spent a night there. And it's also through forums that I get tips on the right places to eat--- oh, so important for me! hehehe.

I hope these tips could be of help to some of you. Always remember though, an airline will not put all the seats in a flight on sale, these will almost always be limited only. So, if you see them already sold out, that's because others got to them fast! Be as fast as them or be sorry! As for me, I'm the flash! :) :) :)

Superstitions! Superstitions!

Who believes in them? Honestly, I don't believe on these stuffs. For me they are a big hindrance in many ways! They hinder you to explore things, they limit your learning, and most of all they instill unnecessary guilt on people. And for what? Because of baseless crap? Ugh! As long as I know that I am not causing harm to anyone, then my conscience is clean. Bad luck only comes to negative people and to those who do harm to others. Yes, for me, karma is the name of the game.

Here are some superstitions I have heard in the province:
  1. Don’t sing when eating, you will marry an older man. My mom tried this too, but the 2 times she got married, she got married to a younger man.
  2. Don’t point at the rainbow, you will have a deformed finger. – I was afraid for sometime, I didn’t want to have a crooked finger!finally I got the guts to do it and nothing happened! 
  3. Don’t build a house facing the west, your life will always be going down, no success. 
  4. Don’t step over a rope when you are pregnant, your child will be born with the umbilical cord round his neck. - as you may have noticed now, I tend to disagree what I am told.
  5. If you are sick, chances are the witch must have looked at you or touched you.  Then there was this old lady who claimed to cure all the illness in the village.  All she did was get a pick of ginger, make out a cross on your forehead, and your wrists. Then she puts the ginger on your head and say a sort of prayer in latin.  I knew she didn’t understand what came out of her mouth, This reminds me that during those times, the catholic church said their prayers in latin. Nobody studied latin in my country. The priest can substitute any word that he missed and nobody would even know!
  6. Don't walk under a ladder or you'll have bad luck --- yeah, only if the person on top of that ladder happens to drop one of his tools.
  7. Don't cut your nails at night or you will see a ghost.
Ridiculous? Definitely!

I remember in high school, my friends and I went at the back of our school building where there was an overgrowth of plants and trees. One of my friends didn't want us to go there because she was afraid that we might accidentally step on some unseen fairies which may take revenge on us. None of us believed her, so off we went and she eventually tagged along. The next day, she was sick with fever. Funny because among the five of us, she was the only one who got sick. She said it was because of the enchanted spirits in the forest, I think it was because she was so nervous the day before and that stressed her system.

Obesity: Not a Laughing Matter

Did you know that the World Health Organization (WHO) predicts that obesity may soon replace traditional public health concerns such as undernutrition and infectious diseases as the most significant cause of poor health? In Canada alone, the rates of obesity in children has increased from 11% in the 1980s to over 30% in the 1990s. Factors contributing to this are mainly diet and the decrease in physical activities. Thanks to the technology era which brought about video games, climbing trees and having a run in the park are some activities that some kids are not experiencing anymore. Plus, the modern diet which constitute mostly of saturated fats, such as in junk foods and french fries.

A crude measure of obesity is by the body mass index (BMI) which is a person's weight in kilograms divided by the square of his/her height in meters. A BMI of 30 or more is generally considered obese. While a BMI of 25 (and above) is already considered as overweight.

Presently, I can see campaigns promoting healthy diet (look for unsaturated fat in the label) and exercise/working out. However, I think that these campaigns are not aggressive enough to instill these healthy lifestyle on every sector of the community. Most who have became more aware and have started become conscious are those coming from the A-B crowd, and those who need to look good for their professions. And I hate to say these, but I personally know a lot of people who think that being fat is cute and healthy.

Fact: obesity has a serious impact on health. Diseases associated with obesity are type 2 diabetes, cardiovascular disease, musculoskeletal disorders, and some cancers. Therefore, it reduces life expectancy. Not to mention the psychological impact it has on the person (self-consciousness, inferiority). 

Just earlier today, I saw a teen-age boy who is overly obese, to the point where his gait is no longer balanced and his body structure is assymetrical/deformed. I was discretely observing the people around and could see almost everyone follow him with stares, and the poor boy knew this too as he shyly looked back to see who were staring at him. It was a very sad sight! I feel for the boy and I really hope that his family will help him overcome obesity. Take note, I wish for this not only because I want that kid to look good physically, but mostly because what I saw in him was a walking time bomb where various diseases could possibly manifest any moment, AND also to lift up his trampled self-esteem. Adolescence is no easy stage, and going through that is an added burden. 

The good news: obesity is preventable.There are only 2 keys to solve this: diet and physical activity. This doesn't even mean that you have to cut down on what you eat, you simply have to watch what you eat. Less saturated fat, less calories, more fruits and vegetable, more whole grains, less sugar. You can even indulge once in a while just make sure that you burn it up too. Alternate cardio exercises with strength training every other day, even for just about 15 minutes. You'll notice that you will feel lighter throughout the day and going about the daily chores becomes easier.

I hope anyone who reads this, could in some way, even in their own circle of influence (family, friends) do something to relay this information and instill and follow a healthy lifestyle. By doing it yourself, you become an example to those around you. There isn't even a need to preach, simply tell them what good this has done to you to inspire them to do the same. Remember, the main goal is to become healthy and avoid diseases. Looking good physically is just an added bonus.

Meeting Nemo - Malaroyroy, Coron, Palawan

After Marlin saved Nemo, they went home to live happily ever after... well, actually Marlin got a little sad (he lost his love Coral, remember?). So, with some persuasion from his friends (the fathers of Nemo's schoolmates), Marlin began dating again. And alas, an equally beautiful clown fish caught his heart. Her name is Samantha, a lovely fish who doesn't mind being Nemo's stepmom (they're both of the adventurous kind so they hit it off well). Marlin's family is whole again. He went to find a new home for them, only this time he chose the shores of Malaroyroy Island in Palawan. An island of raw beauty, away from the danger of the deep sea.

I happen to visit the island and got a chance to meet the very friendly family. Ofcourse, Marlin is his old self, so protective and paranoid hahaha ... relax Marlin! Sam and Nemo are excited to see me. I come in peace so you need not worry :)

P.S.

Malaroyroy Island is in Coron, Palawan. It is one of the islands included in the Malcapuya Island loop tour. It is just a tiny island across Banana Island, but it's also a snorkeling area as it offers some coral reefs too, though not so healthy ones. The corals are located near the shore, so tourists ought to be careful when treading the waters here, both for their safety and to avoid stepping on the reefs. Come visit for a first-hand experience! ^_^

My Experiences with Local Banks

I just want to share some of my experiences with the banks I transact with. Recently, one bank has managed to test my patience and I got to blurt out my frustrations in Facebook. That's how I found out that some of my friends are just as frustrated as I am with the said bank. My disappointment is not baseless after all. I would be glad to hear your experiences too, so we know which to avoid next time, hehehe.

- Personally, I will not choose this bank, me transacting with them is a matter of necessity and not of choice. I had to open a dollar account here because my mom finds it easier to send money through this bank from the States. Pros: I do not have to fall in line when I withdraw. I just give my ID for verification and wait for them to call my name, and I am done. Obviously, they prioritize such accounts. Also, they have branches in the rural areas which is why I send money to the province through this bank. Cons: Sometimes they run out of dollars and that's when you really wait until they can finish your request. And I am not allowed to withdraw from my dollar account from other branches, only at the branch where I opened my account. Third, I was once told by a guard to stay outside because, like some box-office hit movie, the inside of the bank is at full capacity - standing room only! How can't it be when their offices are so small? They really should improve on this. Depositors should be accommodated with a decent seat at least. Plus, their clients' safety and security are at risk outside of the establishment.

- Having over 10,000 offices in 85 countries, I had high expectations from this bank. But heck, customer service is so poor. Or is this a local problem? If so, they really need to improve on this. I even dared them to give me an evaluation form so that I can give them an assessment for their own good - every organization needs that. There are transactions in other banks which can be done over the phone. This bank requires forms to be filled up and sent through fax/email (talk about banking online, duh). Twice, my fax have gotten lost. And what do they do? They asked me instead to dictate the data needed on the phone and they will process my application/transaction through that. Another, duh! Corresponding with them by email is also a pain. I really wonder what kind of clock or time system they use because even if they have declared that my email will be answered in two banking days, it usually takes five, sometimes I even have to follow it up for them to remember. Actually, I still have one open case with them from last month. What a really messy system! But hey, their collection department isn't going to disappoint you. Be sure to have no less than 5 missed calls in a day. **shakes head**

- This is my first bank, and up to now I have accounts with them. Pros: Sending money to other BPI accounts has no charge. I hope other banks would follow suit. Second, I believe they have the most number of atm machines where deposits are also allowed (although not all machines have this). Third, most transactions can be done online or through the phone. No hassle at all, very convenient. Not to mention that they have express centers that are open on weekends. Cons: Nothing really. I just wish that I can transact with BPI Family bank through them.

- I just opened an account here so there isn't much to say. I did make a withdrawal a couple of months ago which was over-charged but it only took a single call to their office and it was credited back. There wasn't even a need for me to follow it up since they personally called me to inform me of the reversal. Now, that is what I call customer service. 

Of course, no bank is perfect. We just have to choose which one addresses our needs in the most convenient way. But we are depositors, and these banks are actually earning from us. So maybe it isn't much to ask for a good and cordial service. At this day and age, people will always prefer a bank that can offer convenience. Gone are the times when we have to fall in long lines or take a day off from work to be able to make transactions at the bank by 3pm. I see a few banks gearing for those good developments, and these banks do get a number of depositors because of this. Time for the others to follow their lead.

Chilling at Boracay..... Alone!!!

I have been to Boracay twice. The first time was in the mid-90's with the whole family. We live in Iloilo, so land travel was the way to go via Capiz. As I recall, we left early in the morning and arrived Bora at around 3pm, quite a long and dusty trip. We stayed there for a night and left Bora after lunch the following day. Needless to say, it wasn't such an exciting trip, not only because of the short stay, but traveling with the whole bunch (although fun) has it downside too - you cannot make a move unless you have gathered everyone first. Ugh! Plus the long land travel back and forth wasn't exactly relaxing.

With that experience, I have never really made it a priority to travel back there. And knowing that it is the no.1 tourist spot here in the country, when I think of Bora what comes to mind is "way too crowded". Anyway, since I vowed to travel more and since Cebu Pacific did a very good promo, I decided to buy me a ticket to Bora. Yes, only me! My constant travel buddy was not available, so this time I will be traveling alone. Good thing I chose Bora, it's only a few hours away from Iloilo so I felt relatively safe and daring to go there alone. Also, I have a friend who works for one of the hotels there and she was  able to find me an affordable place to stay plus detailed instructions on how to get there in the island. So Bora, here I come!

I arrived there at almost noon time, fairly hungry, so I just ditched my luggages in the room I rented (1k a night coz I travelled on an off-peak season), packed some beach stuff and off I went to feed my grumbling stomach. Now, I really thought I'd be shelling out a lot for food in this trip, but surprise, surprise! There are a lot of fast food resto there that serves good food for reasonable prices. For a glutton like me, this is great, hehehe.

I loved that I travelled on an off-peak season. The beach wasn't crowded at all but still with it's fair share of foreigners. I enjoy meeting them, really. It's fun trading stories with people from another culture, actually had a few laughs with a bunch of Koreans traveling as a group.

Anyway, I stayed there for 4D/3N, and did the following activities:

First day, had a full body massage along the beach, rented a beach chair and spent the whole afternoon by the beach reading a book and dipping in the waters. I wanted an Italian dinner so I ordered a whole pizza in Don Vito. Also had a couple of cocktails in a bar called Mint. Okay, that Tequila Sunrise was strong!

Second day, I was supposed to join an eco-tour but the agency called me up to inform me that no one else has enlisted to join it. This basically means that I am their only client that day and no way was I gonna pay them the entire tour's cost which was for a minimum of 4 persons. Too bad since I was really looking forward for that. To save the day, I decided to roam around and check out the whole stretch of white beach, from station 1 to 3. I was on my way back when I finally decided to talk to one of those people encouraging tourists to try some water sports. I avoided them before because I thought that their prices are similar to those quoted by the agency I talked to, but alas, to my joy, theirs are about half the price. There are a lot of activities to choose from and I settled for the helmet diving and parasailing. I have been wanting to try out skydiving to deal with my fear of heights, maybe parasailing is the first step, woohoo! So, I gave my camera to my "agent" and gave him instructions to be my photographer (the disadvantage of traveling alone). 

Helmet diving is basically diving with a 30kg pressurized helmet over your head. Don't worry, this feels like 3kgs under water. With the pressure, you keep water from entering into your helmet, thus allowing you to breathe under. You stay submerged for about 30 mins enjoying the (few) coral reefs and feeding the fishes. This costs Php500 which includes a 5min video of you underwater and about 30 still shots, all saved in a CD. Not bad, me thinks.

From underwater, to the sky. I almost backed out when they were gearing me up for the parasailing. My fear of heights was kicking in but I just had to do it. I wanna be tough! And, boy, I'm glad I did that! Such a new and liberating experience for me. I wanted to do it again right after, hehehe. The trick is not to look directly down to avoid getting dizzy. I stayed for about 15mins in the air. And what did I do up there all those time? I did some singing, and I cursed and shouted at all the people who have done me wrong, hahaha! Try it sometime, you'll feel much better when you get back to earth.

Third day, I rented a bike and climbed Mt. Luho. From there, you can see the whole of Boracay island, plus they have a mini-zoo, too. Biking around Bora is a breeze since detailed maps are available in the hotels and souvenir shops. I spent most of the afternoon swimming and souvenir shopping. And that night, I chose a bar with good music playing for a drink.

I left early the following day for a long land travel to Iloilo, where I was to spend the remainder of the week before going back to the metro. All in all, I enjoyed my trip to Bora. That was the first time I travelled alone and with that, I am sure I'll have more of it. Traveling enriches me and this one has tested my courage. I am afraid no more!!! :)

The Wonders of Baking Soda

Sodium bicarbonate or NaHCO3 or most commonly known as baking soda.... i just love this stuff! It practically has way too many uses and it's cheap. Having it at home is really a must, every housewife should know this, and yes, every bachelor and bachelorette, too.

Let's get into the chemistry of it first. According to Webster, baking soda or sodium bicarbonate is a white crystalline weakly alkaline salt, used especially in baking powders and fire extinguishers, and in medicine as an antacid. It is an amphoteric compound, which means it can react as an acid as well as a base but aqueous solutions are mildly alkaline due to the formation of carbonic acid and hydroxide ion. Its application ranges from cooking, medicine, laboratories, personal hygiene, cleaning agent, and many more.

Personally, my three main uses for this are as follows:
  • face exfoliant/mask - i have an oily, acne-prone skin so I do this twice a week. I simply steam my face first, then, making a baking soda paste by adding water in it, I rub this paste on my face to remove dead skin and leave it on for about 10 minutes before rinsing with warm water. I dries my pimples and keep the oilies at bay :)
  • teeth whitener - yep! no need to buy those expensive toothpastes that boast of their whitening effect. Being coffee and tea lover, which stains the teeth, this is very important to me. I usually do this once or twice a week, after brushing my teeth with toothpaste (don't rinse it yet), I dip my toothbrush in a paste of baking soda and brush it on my teeth, then rinse (be sure not to swallow).
  • deodorizer in the fridge - it is slightly alkaline so it neutralizes the acidic scent molecules. Viola! Odor-free refrigerator :)

But hey, do not limit yourself, maximize the use of this great product. To site some more:
  • first and foremost, it is used in cooking as a leavening agent. Baking powder is basically baking soda mixed with cream of tartar and starch.
  • it can also be used to soften peas or dried beans by adding a pinch of baking soda to the water where you soak the beans
  • add a pinch to tomato sauce (while cooking) and coffee (while brewing) to reduce acidity
  • an effective meat tenderizer
  • as first aid to scalding- cover the scald area with baking soda to avoid blistering and scarring
  • deodorize carpets and kitty litters
  • effective and all-around cleaning agent (clothes, drink containers, pans, table tops, combs, etc.,)
  • run a cycle in your coffee maker or dishwasher with baking soda and water for a thorough cleaning
  • underarm deodorant
  • soften your skin by adding it in your bath water
  • deodorize shoes, boots, and socks
  • first aid to sunburn, windburns, bug bites and bee stings
  • freshen the air by sprinkling baking soda on your carpet. Leave for a while before vacuuming.
  • use as a fire extinguisher
  • and many more.....

Now you know why I love this... ^_^

Kung Hei Fat Choi!!!

It's the year of the rabbit, and it's my year! 

It is said that this is the luckiest of all twelve signs, ain't that great? Honestly, whatever luck I am enjoying, I believe is due to my positivity, I am not really a fan of astrology but it is admittedly enjoyable to read at times. Although, I must admit that I filter what I take in - believe in the good predictions, junk the bad ones - only good energy folks! I actually have one true personal story about this. 

Some 6 years ago, my friend urged me to see a fortune teller that she usually visits. The old lady told me then that by this year (2011), I would already have my own house and car. Well, I got my house four years ago, and I am in the process of buying my car. Can you hear twilight zone's theme song in the background now? hehehe.... Honestly, I think what made that prediction come true is because I have set my mind on it. Meaning, I worked hard to have this house and car by this year. I didn't just sit down under the shade of the mango tree and watch it happen. By believing that this is gonna happen, the universe has paved ways for opportunities to present themselves to me, thus, the unfolding of these events. That is the power of positive energy! :)

Going back to the year of the rabbit, I may not be a true-blue believer of astrology, but I am mesmerized by it especially when I see how people go through details just to bring luck in their lives. And the Chinese people's belief and practice of it is amazing. Since, Ongpin is one of my favorite streets here in Manila, I went there to celebrate Chinese year. Merry, colorful, fun!

Calle Crisologo, Vigan

Vigan is the capital of Ilocos Sur, a province located in Northern Luzon. What makes this town really popular is this street - Calle Crisologo - a half-kilometer cobblestoned street lined with Spanish architecture, simply a virtual tourist playground. For a moment, you will be transported to the Spanish-era and have a "feel" of the decade when the Philippines was under their regime. Antique furnitures and wooden benches line the sidewalks, perfect for those tired legs and photo shoots. You may just take a walk along this street or choose to ride one of the "kalesas" for a better old-time experience.


On both sides of the street are rows of souvenir shops, hotels, museums, bookshops, galleries, etc. It would really have been a "back to the past" experience if not for the motorcycles parked along the sidewalks. From what I know, only horse-drawn carriages were allowed here before, obviously the rules have changed. I, personally, would have liked it better if they have kept that prohibition. Vigan, being a UNESCO World Heritage Site, should be preserved and seeing motorcycles in Calle Crisologo just ruins what the site represents and the atmosphere it intends to evoke.

Nonetheless, this place is still awesome and worth visiting. Next time, I hope to spend a night on one of those Spanish-styled hotels and have the pleasure of waking up to this scenery. Hmm, perhaps the local government should try hiring people clad in Spanish costumes, they are crowd-drawers as well, like the Igorots in Baguio or the cartoon characters in Enchanted Kingdom. Just a thought :P

Garlic-y, Pepper-y, Butter-y Chicken!

Define success...... it's when you get asked for your recipe... lmao!

Doesn't that just give you that sense of elation and accomplishment? Especially if you're not even sure of what you're doing? Another "patsam" my friends, from my kitchen to yours....

Garlic-y, Pepper-y, Butter-y Chicken!
This is fairly easy to make. You can choose to bake the whole chicken or cut it into serving sizes or even buy just the desired parts (i.e. legs, wings, etc.,).

First, after cleaning the chicken, place it in a pan and  rub some salt and pepper on it and just let it stand while you preheat the oven (400F) and peel some garlic. And I am not talking about just a couple of garlic here, I mean lots and lots of garlic! The more the tastier! I usually use about 50 cloves (clove = a segment of a head). You just peel them, no need to crush. After that, sprinkle some dried thyme on the chicken, add more pepper if you like, and if you really like it to be spicy you can even rub some cayenne pepper on it. Again, it really depends on how you like it. If there are children eating, then perhaps you should skip the cayenne and use pepper in moderation. Then, rub some butter on it. What I usually use is "imitation butter" which is actually margarine because they are made from vegetable oil but processed to look and taste like butter (check the ingredients). They are healthier but just as tasty. Then finally, add the garlic around the chicken, over the chicken and even inside :)..... Bake for an hour, or longer if you want it to be really brown.

What makes this dish really click I think is the combination of herb, spices and butter flavor. Plus, since the garlic are added whole, they retain their oil which really adds flavor especially when eaten with rice ( I really love eating those garlic, I don't find them bitter at all). Best served with some veggies.... enjoy! ^_^

DoppelgƤnger

I have been meaning to write something about this two for some time now but always forgets. Javier Bardem and Jeffrey Dean Morgan - separated at birth? The similarity is just way creepy. Supernatural? Nah, that's just the show Morgan starred in. I first saw him there, playing as the father of the two lead actors, then at Grey's anatomy as Izzie's love interest who died after a heart transplant (made a lot of audience cry, I bet!). He also did a guest role in CSI as an undercover agent, just a teeny weeny role. 

Anyway, then last year I saw "Eat, Pray, Love" which starred Julia Roberts (loved it!). Then this guy Felipe came and I was like, "oh, it's that guy on TV". But not quite. And I went on like that during the rest of the film... "yes, it is him"... "nah"..... "sure is"..... "no it's not!".... hahaha! Okay, reading the credits proved that it wasn't Morgan. But can you blame me? Can you tell who's who?

It's weird since they are both actors, I wonder how they react when they see each other. Heck, they can make a movie with them playing as twins. I know, overkill... hehehe! Of course, Bardem has that Spanish accent but they are actors and they can  change that which was why I really had a hard time convincing myself it wasn't Morgan in "Eat, Pray, Love". One thing I've learned to distinguish one from the other is by their noses. Bardem's is bigger but you have to see that from the side angle to really notice.

Bardem, by the way, is in the news these days, having been nominated in the Oscar's for best actor (yes, he's the one who can act  ^_^) and having recently had a child with wife Penelope Cruz. 

Maybe I should watch more of these two so I can distinguish them easily next time and stop arguing with myself, teehee!

Twin Lagoon, Coron, Palawan

One of the many famous tourist spots in Coron, Palawan, no wonder at all because of the eye-bulging scenery. During the boat ride to this site, I tell you, every turn the boat makes, a new breathtaking scenery is revealed that you cannot help but anticipate a grander show of nature on the next turn.

We arrived there at noon, just in time for lunch. The awesome sight beats any 5-star resto, those broiled fish tasted like caviar to me! How I envy the locals there to have the privilege of enjoying this beauty every single day.

The place gives a feeling of being isolated from the rest of the world coz the open sea is not visible and you are surrounded by large cliffs of limestone.  The second lagoon can be reached by swimming under a rock formation which is difficult to pass through during high tides so a ledge was built so tourists can use the wooden stairs and reach the other side through a space between the cliffs.  Since the tide was low, we swam under and was in for another show from mother nature. The grand finale of the show, it was another world. Eerie – that’s how I’d describe the other side.  If I felt isolated in the first lagoon, here I felt like the world has ended and we were the only people who survived. Okay, that's morbid, hehehe. We were still surrounded by large cliffs, there’s not a landing we could stand on, the water is a mixture of fresh and salty water, and it was so quiet.  Simply eerie.  Didn’t stay long there coz I felt like a thousand pair of eyes were staring at me, to whom they belong I didn’t want to know, hahaha.

Ginataang Kalabasa

Happy New Year everyone! I bet a lot of us gained an extra pound during the holidays, eh? I did, and when I think of all the meat and cholesterol which I took in, delicious as they were, I feel kinda awful too coz let's admit it, most are unhealthy! Sugar. Fat. Ugh, no wonder they tasted good... :)

So, to kind of cleanse myself, I have been thinking of eating veggies for the time being and remembered I have not eaten this dish for so long which made me crave for it more. Actually, I have not tried cooking this dish on my own. Just watched other people do and ain't it exciting to try it on my own? So, off I went to the market the other day and readied myself to my experiment, hehehe.

Ginataang kalabasa, or simply squash with coconut milk. I checked out some recipes on the net and some people put pork in it but since I've had enough of that already, I decided to use shrimp instead. Okay now, I am not a professional cook. I have had no formal studies in cooking, whatsoever. Everything I learned, I got from my mom's kitchen and mostly from reading recipes and tweaking them according to my preference. In other words, "patsamba" a.k.a. "patsam". Remember that term coz I will be using it a lot for I have a number of "patsam" recipes.

Ingredients: garlic, onion, ginger, squash (peeled and cut into cubes), string beans (sitaw, cut into about 2-in length), coconut milk (thin and thick), whole shrimp (cleaned), shrimp paste, fish sauce, salt and pepper.

First, saute garlic, onions, and ginger. I usually mince my ginger in any of my recipes coz I want them to kind of disappear and not bite unto a whole strip of it as I eat. Add pork (if you are using them) and shrimp paste and saute until pork is brown. Add the squash and pour in the thin coconut milk, salt and pepper and bring to a boil. Let it boil until the squash is partly cooked, then add the string beans, shrimp, and thick coconut milk. Simmer until the string beans are cooked. Add fish sauce, salt, and pepper, according to taste.

Personally, I prefer the squash slightly over-cooked in this dish so I let it boil a bit longer before adding the beans. That's because I love mashing it down as I eat. To each his own folks! :).... Gave some of this to my neighbors and was rewarded a couple of days later with Inihaw na Bangus, nom-nom-nom!

Living, Loving, and Learning...by Leonardo Buscaglia

Have you guys read this book? Leonardo Buscaglia is one of may favorite authors and people. Most lovable and loved by many, and why not when his speeches preaches of nothing but LOVE. He actually taught the subject in the University of California - Love 101. Great, huh? It may be weird for some but I would have gladly taken that class every year. Well, too bad Leo is no longer with us and I wonder if someone has pursued teaching the subject now. Good thing that he was able to author several books for us to ponder on and spend one quiet afternoon with.

About this book, this is actually a compilation of sort of excerpts from his speeches and lectures. Such a nourishment for the soul if you give it a chance to read. It has a way of leading us back to ourselves, of accepting our weaknesses and yet loving ourselves despite of the flaws. To marvel in our uniqueness and to not put our energy into being someone else. Yet, it also emphasizes on the process of learning new things to enrich us, and unlearning things that hinders us. To not limit ourselves by clinging on the filters that were imposed to us as a child by our environment.

That is basically what I like most about this book (no wonder I have read it like a hundred times!), it teaches me to love myself. Not in an egotistical way, but in a healthy manner so that by loving myself I can learn how to love other people and teach them to love themselves too. The title of the book shows us that this is a process. We live, we love, and we learn. On and on and on. We may get hurt or get broken, and we learn from that. Or better yet, we may get lucky and rejoice in it... :) 

            

The one on the left was bought in 1999, so it's been with me for 12yrs now. Over-used, over-read, and over-traveled. I always bring it with me in my travels. On the right is barely a year old, got it during a sale of a local bookstore. I managed to buy 5 copies and been giving them to close friends. Kept one for myself and still have another one which is still waiting for the lucky recipient... ^_^

Bistro Coron

When I was planning our trip to Coron, I went to check out the local forums as I always do when I need to know stuff. Visiting new places doesn't only mean going to the tourist spots, the local food and must-dine in places are just as important. And Bistro Coron is much talked about in these forums--- "don't leave without eating at Bistro Coron!"--- ok, fine, will do! And yes, we did!

Luckily, the resto was near the resort we stayed in, just a few tumblings away :)... It has just a few tables, with a bar and I think a couple of billiard tables. They offer menus for breakfast to dinner, but since we went there for one certain dish, we didn't bother checking everything out. The house specialty - their Pizza Bistro! I love pizza but I am also very picky when it comes to it, much as I love it I still won't eat every pizza that is shoved to my face. Pizza Bistro is just so yummy, yummy, yummy! I was told that some tourists even bring this back home and if I wasn't carrying a heavy luggage, I would have done so, too! Maybe 3 to last me a week of dinner, hehehe :)

Also worth mentioning was the pasta we tried out, it's called Regal de Mare, a seafood pasta in white sauce. This was amazingly delicious! That's the prize you get when you dare to try out new dishes :).. Just thinking of these makes me wanna fly back right now, ugh! ***craving***

BB Creams..... the bug got me!!!

I really am not fond of make-up, mainly because they often cause me to break out and second, I'm a dummy in using them, duh! My routine basically consists of powder and lipgloss and some eyeliner if I'm not so lazy, teehee :)

So, I didn't really give much attention whenever I hear my younger cousins and nieces talk of foundations, eye shadows, etc., And now the new fad, BB creams. Hmm, sounds Korean to me. What instantly comes to mind are Kpops and those really fair-skinned Korean artists, which obviously I know nothing about **grin**

What really brought my attention to BB creams was when I got curious to what BB actually means. Off I went to check Mr. Wikipedia to enlighten me. Whoa! See my naivete? It actually originated in Germany, not Korea, and not as a cosmetic but rather as an ointment used to soothe and regenerate the skin after laser surgery. Thus, it was called BB cream or Blemish Balm. That's interesting. Reading on to related articles, it did say that a Korean actress was the first to use it for beauty purposes. Well, that makes sense. If it can heal the skin after laser surgery and hide blemishes as well, wouldn't that be great?

Most BB creams now are manufactured in Korea, and like any beauty product, a lot of improvements have been made on it to meet the needs of different type of skin plus other extra benefits, such as SPF. To make the story short, I bought one... hehe, like I said, it got me!

It's really funny coz I got late in the game, so when I was choosing one for me I was really amazed with the many variants offered in the market now. A single brand offers like 3 or more kinds. Anyway, I settled for Skinfood's Peach Sake BB cream because of the good reviews I read about it and because I don't want to confuse myself any more by looking into all the options.

So far, I love it! It's like a tinted moisturizer and I like that it has SPF20+. The coverage is light to medium which is fine with me. It's supposed to offer good oil control which didn't really work much for me, maybe because I really have oily skin and I don't use primers. But I really like that it doesn't feel heavy on my skin, it actually gives me a natural and healthy glow which is amazing really. And most of all, it doesn't aggravate my pimples. Really good for my sensitive skin. And the sweet smell! Love it! :)


Am I glad that I got curious on this stuff, now I found a product that really compliments my skin without that cake-y look. Maybe I'll try Skinfood's Aloe BB cream next :)

friendship

I consider myself the most vulnerable person on earth. Easily played on, easily fooled, easily taken for granted.

Now why did i give this blog its title? That's because this is my overview of how I have been a friend and how I have been neglected as one.

I almost always see the good things. If a person shows me one good side of him/her, you win me. That tiny bitsy thing will give me a lasting impression of that person, of his potentials, clouding everything else that I should have taken in consideration. Realities that are right in front of my face.

What can i say, that's me. Is there anything bad in seeing the good in others? Nothing i guess. It only becomes bad when the other person uses that to either exploit you, play with you or worse be so selfish.

Many times I have gone out of my boundaries just to save a friendship that I have valued most, only to be rejected. It even came to the point of begging. still, no budge. Then it struck me, this person never valued me. with all the good I've shown, nothing good was given back. And I have only myself to deal with it in sadness.

As i may quote one of the messages I got from GodWhispers....."Go to where you are appreciated, not to where you are tolerated, not to where you are not valued. I have given you gifts. Give them to those who appreciate them. Do not throw your pearls to the swine." So true... ^_^

Maquinit Hot Springs - (Coron, Palawan)


One thing I failed to ask the locals of Coron is what "Maquinit" exactly means or stands for. It could be a place or some famous local hero or simply the local term for the tagalog word "mainit" - which means HOT! At 45C .... whew!

Located in Coron, Palawan, this hot spring is one of the must-see places there. Mostly visited by the middle and old-aged for the therapeutic effect they get from dipping in it,  young ones like me also go there for a relaxing sauna bath experience, also best recommended for those aching legs after climbing Mt. Tapyas' 720 steps.

Personally, I found it hard to get in the water :). The trick is to do it really slow beginning with your toes inching up to your neck. And if you're up for it, then go dive in 'til your ears get red (*grin*). It would be best to stay in the water until you're sure you don't want no more coz there's a sudden drop in temperature and you would need to go slowly again for another dip.

Surrounded by rocks and mangroves, this place is really relaxing. And the view is at its best during sunrise or sunset, so plan your trip well. Enjoy! :)
